Dr. Gustavo Adolfo Gonzalez Aguilar's research is focus on antioxidant and development of functional foods. It is very important to their group to elucidate the possible interactions between bioactive compounds and fiber and how the bioaccesibility and bioaviability is affected during the digestion processes.
